Then check the rules: who can close, who is certified, who is under eighteen and cannot work late, who is already near overtime. Reversing that order produces a schedule that is easy to build and wrong.

Keep versions, show every person only what concerns them, total the hours and the cost as you build, and record swaps and approvals. A spreadsheet does the grid perfectly well; what it cannot do is tell you on Friday what the schedule said on Tuesday.
How do you schedule around availability that changes every week?
Collect availability on a fixed deadline before the schedule is written, and treat anything after that as a swap request rather than an input. Without a deadline the schedule is never finished, which is the most common reason managers write it three times.
