Count the whole cost, not just the wage

Wages, employer payroll taxes, insurance, holiday accrual and any non-productive paid time. A restaurant labor cost calculator that stops at the hourly rate understates every schedule by a roughly constant margin, which makes the percentage useless for comparing one week with another.

Divide by the sales that shift produced

Labour percentage is only meaningful against the sales in the same period. Weekly is the minimum useful grain and by day part is where the answers actually are, because the overstaffing is almost never spread evenly: it sits in two specific shifts that nobody has looked at.

Read the number before you publish the schedule
